Recipe: German Sunshine Cheesecake

This delicious cheesecake is light as air and bright as sunshine thanks to our two special ingredients: lemon and Quark.

Quark is a farmers’ cheese, commonplace in rural Germany where my Mom grew up, but was difficult to find when she immigrated to the States. When she asked shopkeepers if they carried Quark, they would direct her to plain yogurt. That wasn't it. Once I remember her straining cottage cheese. That wasn't it either. When she found Ricotta cheese, she said it was so close but not quite. Quark was the taste of home that she missed, and my Mom would crave it like I crave peanut butter. Or Oreos.

Now it's a bit easier to find Quark. Look in any specialty cheese shop or gourmet grocer and you'll find it. It's lighter and creamier than most cheeses, lower in calories and fat than cream cheese and higher in protein. And it makes the most incredibly light yet decadent cheesecake you'll ever taste. We promise you, it's worth the search to find Quark.

German Sunshine Cheesecake

Ingredients for the dough:

  • 1/2 t baking powder
  • 250g (2 c) flour
  • 120g (1/2 c) butter
  • 80g (3/8 c) sugar
  • 1 egg
  • dash of salt

Ingredients for the filling:

  • 1kg (2 1/4 lb) Quark
  • 250g (1 1/8 c) sugar
  • 90g (3/4 c) flour
  • 120g (1/2 c) butter
  • 3–4 T milk
  • 1 lemon
  • 5 eggs


1. For the shortcrust dough, mix the ingredients with your hands to a smooth consistency, then press evenly into the bottom of a buttered springform pan.

For the filling, separate the eggs and whisk the egg whites until they are stiff peaks. Set aside. In another bowl, mix the Quark, sugar, flour, butter, milk, egg yolks, zest from the whole lemon and juice from half the lemon. Once the mixture is creamy and smooth, delicately fold in the egg whites.

Pour the filling into the spring form pan and bake at 180° C / 350° F for 45–60 minutes until a toothpick pushed in the center comes out clean. Let it cool completely before serving. Serve with fresh berries, a sprinkle of powdered sugar, and a cup of tea.
